It’s Friday again! And I thought I’d share this amazing curried shrimp recipe with the masses. I’ve made this and it was quite yummy :-) If you’ve never been to Elana’s Pantry go there now! This woman makes some delicious gluten free foods that are packed full of protein and good stuff.
Elana has MS and is an inspiration to me. I don’t eat gluten and try to limit my grain intake as much as I can (I love corn grits and totally cheat with Giordano’s pizza when I’m home every once and a while) because I too have a few autoimmune disorders. And eating gluten messes me up to the point where I can’t walk if I have too much of it…booo!
So like I say every week: Enjoy the challenge! This is an easy recipe that I use as an awesome topping to anything that your imagination allows. Or you can eat it alone. It’s your prerogative. Have a great weekend!
